fluffy hot pancake with berries, nutella ferrero and homemade whipped cream.


Hello again, PANCAKE!
Do you remember the last time I made pancakes' stack was on New Year's Eve last year??? So, it's been like mooore than two months and I'm really really craving for it. 

If we talk about breakfast, pancake always comes first. On my mind, yes. I love making pancakes and have done it so many times before. A pancake can be served sweet and savoury, all depends on what you like more. If you wanna make a savoury one, probably you can go with bacons, eggs, sausages, cheddar cheese, a bit salad as companion or some zucchini.


I personally love the sweet one better, so again this morning I made Fluffy Hot Pancake with berries, Nutella ferrero and homemade whipped cream.


This recipe always works for me! So, if you wanna have a go, here's the recipe to follow:


Making 5-6 pancakes.

For the pancake: 

Ingredients:

1 tablespoon granulated white sugar
2 tablespoons unsalted butter
1/2 cup all purpose flour
1/3 cup milk
1 teaspoon baking powder
1 egg

Directions:

1). Separate the egg whites from the yolk. Put in two different bowls.
2). Add milk into the egg yolk, beat it with an electric mixer /hand-mixer.
3). Then, add the flour and baking powder into the milk mixture, mix gently. Leave more lumps if you like thick pancakes.
4). Beat the egg white in another bowl, add sugar when foams appear, then beat until stiff.
5). Gradually add the egg white into the batter, and stir it (remember not to overmix the batter!).
6). Rest for at least 20 minutes (don't skip this step! This is the most important step of making a fluffy and thick pancake, so be patient to wait a bit.).
7). Heat the pan and turn to medium-high heat. Ladle some butter into the pan. Quickly pour any excess batter into a jug, return the pan to the heat, then leave to cook, undisturbed, for about 30 seconds. When bubbles start to burst, flip it immediately. (The pancake should turn golden underneath after about 30 secs till it be ready to turn).

For the homemade whipped cream:

Ingredients:

2 tablespoons sugar
240 ml (1cup) heavy cream

Directions:

1). Place the sugar into a mixing bowl and add the heavy cream.
2). Whisk until the cream reaches stiff peaks (you can also use a handmixer). It takes for about 1 minute.

For assembling: 

fresh berries (strawberry, raspberry, blueberry, etc)
a scoop Nutella ferrero

After each pancake being cooked, serve them as you stack onto a plate. Slice the strawberries and put them on top of each pancake, continue to the rest of the pancake. Finally top them with a huge strawberry, few blueberries and raspberries... then serve with a scoop of Nutella ferrero and homemade whipped cream!


A breakfast couldn't get any better!
