white cake with whipped cream frosting and cinnamon sauteed bananas.


Hello everyone!
Feels like yesterday's still new year's eve, but now we're heading into the end of January already. How time flies! As so many recipes were asked for the couple of weeks, I decided to finally start a food blog and here's a post of a cake I baked this morning! It's a pre-exam baking because I have many many exams awaiting in the upcoming weeks... But, actually baking could raise my mood and brought me so much joy. That's why I keep baking. 


It's a white cake with whipped cream frosting and cinnamon sauted bananas! I also topped the cake with toasted almonds. Yummy! I do like it a lot, especially the sweetness which came from the caramelized bananas, the fluffiness from the cream and the cake itself. Perfect option for a small party, maybe?


So, here's the recipe you can follow. Hope you have a great baking time!

For the white cake:

Ingredients:

1 cup granulated white sugar
1/2 cup unsalted butter, room temperature
2 large eggs, room temperature
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose-flour
1 3/4 teaspoons baking powder
1/2 cup milk

Directions:

1). Preheat oven to 350 degrees F (175 degrees C). Grease and flour the pan (you can use different kind/form of pan).
2). In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix it well. Finally stir in the milk until the batter is smooth. Pour or spoon the batter into the prepared pan.
3). Bake for about 30 to 40 minutes in the preheated oven. Cake is done when it springs back to the touch.



For the homemade whipped cream:

Ingredients:

2 tablespoons sugar
240 ml (1cup) heavy cream

Directions:

1). Place the sugar into a mixing bowl and add the heavy cream.
2). Whisk until the cream reaches stiff peaks (you can also use a handmixer). It takes for about 1 minute.

For the cinnamon sauteed bananas:

Ingredients:

4 large bananas (firmly ripe or slightly underripe)
1-2 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
2 tablespoons unsalted butter

Directions:

1). Cut bananas into slices.
2). Toss slices in a bowl with the sugar, cinnamon and lemon juice.
3). Heat saute pan over medium-high heat, add the butter.
4). When butter is bubbly, add the bananas.
5). Cook them for about 2-3 minutes until tender.
6). Remove from the heat, (The sliced bananas should hold their shape and be caramelized). 

For assembly:
ground almonds/hazelnuts/pistachios, toasted and cooled (optional)

Spread the whipped cream on top of the tart. Arrange the sauted bananas on top of the cream. Sprinkle with the toasted nuts.
